Abstract

Background: Human Immunodeficiency Virus (HIV) destroys the antibody system, which causes faster protein breakdown resulting in lower albumin concentration. Zinc supplementation when added to protein in milkfish flour may increase albumin and zinc levels that associated with activity of the aminolevulinic acid dehydrase (ALAD) that synthesizes heme. Objectives: This study aimed to prove the effect of zinc and milkfish flour addition on albumin and hemoglobin levels in HIV/AIDS patients.Methods: An experimental study with randomized pre and post-test with the control group design using control subjects (n=17) and treatment (n=21). The administration of milkfish nastar with zinc to treatment group was 100 g/day for 60 days, while the control group was given milkfish nastar without zinc 100 g/day for 60 days. The measurement of albumin level used auto photometric with enzymatic color test methods and reticulated method for hemoglobin level measurement conducted before and after treatments. Data were analyzed using Shapiro-Wilk, paired t-test, and independent t-test with a significance value at p<0.05. Results: The means of albumin level in the treatment group increased by 7.03%, while the control group increased by 4.33% (p>0.05). Means of hemoglobin level in the treatment group increased by 12.0%, while the control group increased by 7.9% (p<0.05). Conclusion: Albumin and hemoglobin levels increased after milkfish nastar administration with zinc addition in HIV/AIDS patients.

Abstract

Pengabdian Masyarakat yang dilaksanakan bertujuan untuk meningkatkan keterampilan kader posyandu dalam pemosisian kepala dalam mengukur panjang badan anak di bawah dua tahun (baduta) di Posyandu Kertajaya, Kecamatan Gubeng, Surabaya. Pengabdian dilakukan dengan menggabungkan teori dan praktik untuk meningkatkan akurasi pengukuran panjang badan. Kegiatan ini melibatkan 30 mahasiswa Jurusan Gizi Poltekkes Kemenkes Surabaya dan 30 Kader Surabaya Hebat (KSH) posyandu. Hasil menunjukkan bahwa sebelum pengabdian, kader belum semuanya tepat ketika memosisikan kepala anak dan menggunakan alat ukur Length Board Measuring dengan benar. Setelah mengikuti pengabdian, keterampilan kader memosisikan kepala anak dan menggunakan alat ukur Length Board Measuring lebih baik. Penggunaan panduan pengukuran dari Kementerian Kesehatan (Kemenkes) dan demonstrasi langsung oleh dosen efektif dalam meningkatkan kompetensi kader. Temuan ini mendukung pentingnya pengabdian berkelanjutan untuk kader posyandu dalam rangka mendukung upaya penurunan prevalensi stunting dan peningkatan status gizi anak di Indonesia.

Abstract

The nutritional adequacy of the Insan Cendekia Mandiri (ICM) junior high school students is obtained from the provision of food in the dormitory. One way to increase the acceptance of food intake organized by the boarding institution at the Insan Cendekia Mandiri Junior High School (ICM) is to modify the food menu. The provision of food doesn’t escape the standard portion for each individual so takes a portion of food that is by the RDA, so that it can be seen whether the individual needs of junior high school students have been met or not. This study aims to analyze the effect of modifying the menu of a high-glycemic meal on the acceptability and increase in learning concentration in students of SMP Insan Cendekia Mandiri in Sarirogo, Sidoarjo. This research method uses a pre-experimental design with a one-group pretest-posttest to determine the quality of the modification of the high-glycemic plate menu through the level of preference, acceptance of the increase in learning concentration of junior high school students at Insan Cendekia Mandiri (ICM) Sarirogo, Sidoarjo. The research sample was 37 junior high school students taken by simple random sampling using a formula to meet the inclusion and exclusion criteria. The variables in this study consisted of independent variables, namely modification of high glycemic prescriptions, the dependent variable was acceptance and learning concentration. The research instrument used is a 7-day menu cycle using organoleptic tests by conducting pre and posttest. The result is The breakfast menu from ICM has a lower glycemic index than the modified menu because of the ingredients used. There is a difference in the average energy value in the modified menu, which is 102.5 kcal compared to the breakfast menu from ICM, 2,94 grams of protein average higher than the breakfast menu on ICM, 10,9 grams of fat higher than the breakfast menu on ICM and then 10,76 grams of carbohydrate average lower than breakfast menu on ICM, and student concentration has increased because of the modified menu which has a high glycemic index.

Abstract

Degenerative diseases are infections that almost occur in old age, with decreased physiological function will have an impact on several chronic diseases, such as hypertension, diabetes, osteoarthritis, Alzheimer's, heart disease, kidney failure, therefore, to prevent the occurrence of these diseases it is necessary to strive for promotive, preventive, and rehabilitative measures. One of the efforts made is to carry out community service in the form of assisting the elderly so that they can live independently and have a good quality of life. Community service for Departemen of health Poltekkes Kemenkes Surabaya which was carried out at RW 2 Bulak Village in the form of counseling, health checks, nutrition fulfillment education and elderly gymnastics. The results of counseling education about degenerative diseases and their prevention have shown a 90% good level of understanding, and the elderly have high enthusiasm to participate in gymnastics movements and do health tests. Furthermore, the continuation of this activity is expected to be followed up by improving effective communication between puskesmas officers, elderly cadres so that the elderly program can run optimally

Abstract

ABSTRACT Stunting remains a serious challenge for Indonesian society. The 2018 basic health research reported that the prevalence of stunting among toddlers reached 30.8%. The impact of stunting is not only on physical growth but also on cognitive development and the risk of diseases in adulthood. Community service plays a crucial role in supporting government efforts to address stunting through nutrition education, infant and child feeding practices, sanitation, hygiene, and family economic empowerment. Based on this, the involvement of higher education institutions is necessary to improve public health through an approach of interprofessional collaboration and interprofessional education designed in community service activities that focus on empowering communities through integrative assistance. This community service is carried out in 2024, located in Tambak Wedi Village, Surabaya. The activities conducted include training and assistance in the production of processed foods based on moringa leaves and fish, health education on healthy living behaviors, guidance on parenting and breastfeeding/MPASI, training for early detection of high-risk pregnancies for families, and checking hemoglobin and protein levels for pregnant women in a state of chronic energy deficiency who receive supplementary feeding based on moringa leaves and fish. At the beginning of the community service activities, the results of health and laboratory examinations were as follows: several mothers were found to have a mid-upper arm circumference (MUAC) below 23.5 cm, which may indicate a risk of chronic energy deficiency (CED). Pregnant women were still found with hemoglobin levels below 11 g/dL, indicating anemia during pregnancy. Additionally, protein levels in pregnant women were found to be 6.2 g/dL, and there was one stunted child and seven children in a pre-stunting condition. Following up on the results of the initial health examination, interventions were carried out for pregnant women with chronic energy deficiency and toddlers at risk of stunting by providing snacks made from moringa and fish for two weeks. Abstract

Seiring bertambahnya usia, lansia dapat mengalami penurunan fungsi tubuh baik secara fisik maupun psikologis. Penurunan fungsi tersebut dapat menjadikan lansia lebih rentan terhadap penyakit seperti penderita hipertensi dan Diabetes Melitus. Aktivitas fisik seperti senam hipertensi merupakan upaya yang dapat berperan dalam mengelola tekanan darah, meningkatkan kesehatan jantung serta berperan dalam relaksasi bagi lansia, selain itu, budaya literasi juga dapat membantu lansia dalam meningkatkan daya ingat. Kegiatan pengabdian masyarakat dalam kegiatan posyandu lansia dilaksanakan pada tanggal 3 Januari 2024 di gedung Poltekkes Kemenkes Surabaya dan diikuti oleh 50 lansia. Alat dan bahan yang digunakan dalam kegiatan ini antara lain tensimeter untuk mengukur tekanan darah serta menggunakan Point Care of Test (POCT) untuk mengukur glukosa darah. Pada kegiatan ini lansia diikuti dengan karakteristik 70% partisipan berjenis kelamin perempuan dengan 32% partisipan memiliki tekanan darah yang tinggi serta 10% partisipan memiliki kadar glukosa darah yang tinggi.

Abstract

ABSTRACT Soy juice or also known as soy milk is in great demand by people who are allergic to cow's milk. Existing soy milk usually smells a little languorous so it is less desirable, to anticipate this by adding pandan leaves when boiling it or by adding synthetic essences. In this research, soy milk will be added with ingredients that have never been used and combined, namely cinnamon and green grass jelly. This research aims to evaluate the acceptability and nutritional benefits of soy milk with cinnamon and green grass jelly as an alternative snack for type 2 diabetes patients. The research design used is an experiment by giving treatment to samples to find out the acceptability of the product after being treated. The product made was carried out 3 treatments on the composition of ingredients (weight) with the ratio of Soy Milk : Cinnamon Powder : Green grass jelly as follows : Formulation 1 (SC01) = 150 : 1 : 50, Formulation 2 (SC02) = 150 : 1,5 : 50, Formulation 3 (SC03) = 150 : 2 : 50. Tests on soy milk with the addition of cinnamon powder and green grass jelly were carried out through 2 types of tests, namely subjective tests and objective tests. Subjective tests (organoleptic tests) were conducted with a target of 30 trained panelists using a hedonic scale to analyze the level of liking based on color, taste, aroma, and texture. As for objective tests using gravimetric tests in the laboratory by looking at the fiber and chromium content in soy milk with the addition of cinnamon powder and green grass jelly. Based on the results of the Organoleptic Test on all formulas, the most preferred is formula SC03 with 17 panelists/56.7%, the aroma of formula SC02 with 18 panelists/60%, the taste of formula SC02 with 14 panelists/46.6%, the viscosity/texture of formula SC02 and SC03 with 15 panelists/50%. Abstract

Hipertensi masih menjadi masalah kesehatan utama di Indonesia, termasuk di Surabaya. Gaya hidup yang tidak sehat dan minimnya edukasi menjadi faktor risiko yang memperparah kondisi pasien hipertensi. Kegiatan pengabdian kepada masyarakat ini bertujuan untuk meningkatkan pengetahuan dan sikap pasien serta keluarga pasien hipertensi melalui pelayanan home care. Metode kegiatan meliputi pengukuran status gizi, penyuluhan gizi seimbang, konseling, serta pemberian makanan tambahan (PMT) kepada pasien di Kelurahan Kertajaya, Puskesmas Pucang Sewu. Hasil evaluasi menunjukkan peningkatan pengetahuan sebesar 94% dan peningkatan sikap sebesar 88%. Kegiatan ini terbukti efektif dalam mendorong perubahan perilaku positif pasien dan keluarga pasien hipertensi.

Abstract

The aim of this community service is to train the readiness of the community and academic community of Poltekkes Kemenkes Surabaya in facing disasters in Indonesia. The implementation method took place on May 6, 2024, at the Nutrition Department of Poltekkes Kemenkes Surabaya, involving 100 participants, including lecturers, students, and local residents. The training utilized interactive methods such as discussions, role play, and disaster simulations to enhance participants' understanding and engagement. The outcomes showed a significant improvement in disaster nutrition management skills in the Surabaya region. Participants not only gained theoretical knowledge of disaster nutrition but also practical skills applicable in real-life situations. Recommendations from this initiative include enhancing the provision of more in-depth training materials, using advanced technology for simulations, and improving logistical support for smoother implementation of future activities. This community service significantly contributes to enhancing the readiness of Poltekkes Kemenkes Surabaya and strengthening community resilience to disasters in Indonesia. For future community service activities, it is recommended to conduct more comprehensive implementations and involve a wider range of participants.

Abstract

Heart disease is the leading cause of death in the elderly, mainly due to unhealthy diets and metabolic risk factors such as hypertension and diabetes. This nutrition education and dietary consultation program aims to increase the understanding and change of behavior of the elderly in implementing a healthy diet to prevent heart disease. The activity was held for one month in Gubeng District, Surabaya, involving 125 seniors, lecturers, and students. Intervention methods include interactive education, simulations, and personalized nutrition consultations. The evaluation results showed a significant increase in knowledge scores, changes in positive attitudes, and adoption of a healthier diet based on statistical analysis of the Paired t-Test and Wilcoxon Test (p < 0.05). Knowledge Improvement: The average knowledge score increased from 65.2 ± 10.1 to 82.7 ± 8.5, reflecting an increase of 26.9% (p < 0.05). Improved Attitudes: 85% of participants switched to a more positive outlook on adopting a heart-healthy diet, with the Likert scale rating increasing from 3.2 ± 0.8 to 4.5 ± 0.6 (p < 0.05).  This program effectively improves dietary knowledge, attitudes, and behaviors among the elderly in Gubeng Regency. The sustainability of the program is advised through technology-based education and family involvement to improve the quality of life of the elderly sustainably.
