Abstract

Jelly is a dessert that requires gelling agent on the making process. Besides kappa carrageenan originated from Eucheuma cottonii, the gelatin obtained from  catfish skin was also  used as the alternative source of gelling agent The purpose of this research  was to obtain the best concentration and  ratio of patin fish gelatin and kappa carrageenan in jelly formulation, and to study the physical and sensory characteristics of the modified jelly.. The formulation of jellies were combination of  concentration and gelling agent ratio (gelatin:kappa  carrageenan), which are 1%, 1:1; 1%, 2:1; 1%, 1:2; 2%, 1:1; 2%, 2:1; 2%, 1:2; 3%, 1:1; 3%, 2:1; and 3%, 1:2 respectively. The best combination was determined based on the best score obtained from each test parameters on physical and sensory analyses. The result showed that concentration and gelling agent ratio affect physical and sensory characterstics of the jelly. Jelly with 2% gelling agent and gelatin : kappa carrageenan ratio of 2:1 was the best formula which possessed the closest physical characteristic to the commercial jelly (not significantly different) on gel strength parameter (123.29 g cm) and viscosity (79.90 cPs); although gelling point (32.83 °C), melting point (45.83 °C), pH (5.20), and syneresis degree (0.07%) were significantly different. The best jelly had better syneresis degree compared to the commercial one (lower numeric score). For the sensory characteristic, the best jelly was still less in (chewiness), color (clarity), and overall acceptance.Key words: Eucheuma cottonii, gelatin, jelly, kappa carragenan, patin fish

Abstract

This article discusses various philosophical thinking methods that have significantly impacted the implementation of management science. Philosophical schools such as rationalism, empiricism, skepticism, idealism, and pragmatism offer unique perspectives on understanding reality and knowledge and how these can be applied in management practice. This research aims to identify philosophical paradigms that can help mitigate risks in management and comprehensively apply the fundamentals of social science. Through a literature review approach, the results show that philosophical thinking methods enhance managerial flexibility and open space for systematic thinking in decision-making.

Abstract

The vital role of SMEs worldwide in generating employment, creating added value, and driving inclusive economic development is widely recognized. However, SMEs often face challenges such as limited access to resources, difficulties in adapting quickly to change, and uncertainties within the business environment. This study aims to explore the integrated application of agility strategies and risk management to enhance SME performance and resilience, ultimately contributing to the achievement of global SDGs. The novelty of this research lies in its comprehensive analysis of the synergy between these two approaches in the context of sustainable SME performance, a topic that has not been extensively explored. The urgency of this study stems from the need to strengthen SMEs so they can maximize their role in achieving SDG goals related to poverty alleviation, job creation, and inclusive economic development worldwide. The method employed in this research is a Systematic Literature Review (SLR), which involves gathering and analyzing relevant journal articles using VOSviewer software in relation to the chosen keywords. The findings indicate that combining agility strategies with risk management improves SMEs' capacity to adapt quickly, seize opportunities, and manage a range of business risks effectively. This research advocates for a holistic approach by integrating agility strategies and risk management to achieve optimal, sustainable performance, thereby supporting sustainable development goals on a global scale.

Abstract

In a more competitive business environment, employee performance is a crucial factor that influences an organization's success. Elevated employee performance not only facilitates the attainment of business objectives but also fosters a positive and productive work environment. This study seeks to examine the correlation among employee motivation, work discipline, and performance, along with external influences that may affect the interplay among these three components. By comprehending this link, it is anticipated that firms can devise more effective strategies for managing human resources, hence enhancing total employee performance. This study used a quantitative methodology with a sample of all employees from energy companies in Madura, comprising a total of 50 individuals. Data were gathered via questionnaires with a Likert scale ranging from 1 to 5. Data study employed multiple linear regression, revealing that job motivation and work discipline significantly influenced employee performance. The analysis results indicated that the regression model accounted for 44.1% of the variance in employee performance, with work motivation and work discipline identified as significant independent factors. This study's conclusions offer theoretical and practical insights for firms to enhance employee performance. Organizations must cultivate a work environment that fosters internal drive and work discipline, while also considering external elements such as effective supervision and leadership structures. Consequently, firms can formulate more efficient human resource management strategies to enhance employee performance across diverse sectors.

Abstract

The development of digital technology has encouraged organisations to adopt big data analytics in human resource management (HRM), but there are still challenges in leveraging it for effective decision-making. This study aims to investigate the effect of big data utilisation on the quality of HR decision-making and identify the supporting and inhibiting factors for its implementation. A quantitative method with purposive sampling survey was conducted on 100-150 respondents from companies that have implemented big data-based management information systems and HR analytics. Data were analysed using Structural Equation Modeling (SEM) with AMOS software. The results showed that big data analytics significantly improved the quality of HR decision-making, with HR digital competencies and organisational culture as important mediating factors. However, challenges related to cultural resistance and limited expertise were found to affect the effectiveness of implementation. The practical implications of this research emphasise the importance of HR digital capacity building and ethical data governance to support the transformation of HRM into an adaptive strategic function in the digital era. This research also contributes to the development of data-driven management theory with a holistic approach that integrates technical, human, and ethical aspects.

Abstract

This research aims to analyze the potential legal conflicts arising from the mismatch between the employment contract of Government Employees with Work Agreements (PPPK) and the applicable regulations related to the appointment of school principals. The method used in this research is normative legal research with a statutory approach to examine related regulations. Data collection consists of primary legal materials from laws, secondary materials from legal journals, and tertiary materials as supporting references. The analysis used a qualitative normative method to interpret the data in a comprehensive legal context. The results show significant legal uncertainty regarding the status and rights of PPPK in strategic positions, especially in the school principal position. The inconsistency of regulations regarding tenure and legal protection for PPPKs creates potential conflicts that can affect their career stability and performance. Recommendations regarding legal harmonization and clearer regulations are proposed to ensure legal certainty and protection for PPPKs in strategic positions.
