Abstract

The research was aimed at determining the effect of fishing techniques, handling facilities and methods on the quality of the catch. The research employed four types of fishing gears, i.e. purse seine, cantrang, gillnet and boat-liftnet with five replicates each. Five species of the dominant catch were taken for quality determination on-board, at landing sites, and after auctioning. The condition of handling facilities and methods were evaluated. Fish transit time (time lapse between the fish lifting and auction process) was also determined. Results indicated that the fish quality decreased as the transit time increased. Nearly all fish caught were subjected to neither good handling nor low temperature despite the availability of good handling facilities. Nevertheles, the fish quality remained fairly good up to the point of soon after auctioning (pH’s<7 and organoleptic scores >7). When alone, none of the quality predictors affected the fish quality. However, when the fishing techniques were compounded the quality predictors significantly affected the fish quality. Regression analysis showed that, when the fishing techniques were uncompounded, 73.96% of the fish quality was determined by fishing with purse seine, cantrang, boat-liftnet and fish transit time. When fishing techniques were compounded, however, the fishing techniques, on-board handling methods, on-board and on landing site handling facilities, and the fish transit time contributed 73.96% effect to the fish quality. The PCA analysis showed that as much as 52.52% and 27.27% the fish quality were determined by the purse seine and cantrang, respectively.

Abstract

This research aims to determine the microbiological contents of ice used and its effect on mackerel tuna (Auxis thazard) and to determine the amount of microbiological contents of mackerel tuna (Auxis thazard) kept with different sources of ice. This research was conducted in February - April 2020 by adopting experimental design. The microbiological parameters included Total Plate Count (TPC), Coliform, Escherichia coli, and Salmonella, all of which were carried out in laboratory. The data obtained were presented in form of tables and analyzed descriptively. The results showed that the three ices used for storage did not contain Escherichia coli and Salmonella, but did contain TPC and Coliform. The highest TPC and Coliform contents of the three sources of ice was found in ice A with TPC value at incubation temperatures of 22ºC: 62 colonies / 100mL and 37ºC: 107 colonies / 100mL. The Coliform value on ice A was also the highest, which was too much to count. In addition, the results showed that mackerel tuna kept using three different sources of ice did not contain Coliform, Escherichia coli, and Salmonella. However, fish that had not been kept in ice (0 hours) and fish that had been kept in ice all contained TPC, with the highest TPC content of 1.5 x 103 colonies / 100g found in fish kept in ice B. The results showed that mackerel tuna kept in those three different ices were still safe for consumption after storage of 6 hours.

Abstract

This study aims to analyze the tilapia population parameters in the waters of Lake Tempe, including estimating population parameters, as well as catches per recruit. Data on body length measurements (Lt, cm) of tilapia caught by monofilament gill net and bottom trap in October – December 2021 amounted to 1600 individuals. The tilapia growth model follows the von Bertalanffy growth model. Pauly's empirical formula and the catch curve are used to estimate the M and total mortality (Z), respectively. The fishing mortality rate (F) is obtained by F=Z-M. The value “E” is obtained from E=F/Z; (Y/R)' values using the Beverton and Hold’s formulas. FISAT-II software was used to calculate all parameters of Oreochromis niloticus population dynamics. The research results show that the estimated values for growth parameters (L∞, K, and t0) of tilapia are 35.5 cm; 0.35 per year; and -0.4512 years. The estimated of natural mortality, total mortality, fishing mortality, and exploitasi rate are 0.89 year-1 each; 2.68 years-1, 1.79 years; and 0.7. Mean while, the estimated actual Y/R' and optimal Y/R' values are 0.013 g/recruitment and 0.0155 g/recruitment, respectively. In conclusion, the tilapia in Lake Tempe takes a long time to reach its maximum length. Greater mortality is caused by arrest factors. The status of the tilapia fishery is over-exploited, in conditions where the optimal Y/R' value is higher than the actual Y/R'.

Abstract

Cat fish is one of the top commodities that has a high nutritional content and is widely grown in South Sulawesi, based on the quantity of fisheries produced in the cultivated fisheries in the South, lele one of freshwater fish grown with high yields. The aim of this study was to determine the quality changes of fresh cat fish (Clarias gariepinus) from conventional cultivation based on chemical parameters during cold storage. The sampling technique used is Accidental Sampling, where samples are taken directly from the cultivation site. Samples have a uniform size and physical condition that still looks fresh. In this study, chilled samples used ice in a 1:1 ratio with storage times of 0 hours, 4 hours, 8 hours and 12 hours. The relationship between the storage length and the measured parameters is analyzed using simple linear regression. The results of the study showed that the pH, TVB, peroxide, organoleptic and temperature numbers had a significant relationship with storage time. Change in the quality of fish during storage 0 hours, 4 hours, 8 hours and 12 hours showed an average pH value of 6,5-6,0, TVB 5,48-18,53, peroxid number 3,39-34,63, organoleptic 9,00-7,67 and fish temperature of 16,50-21,53. Each parameter indicates that lele fish at storage from 0 hours to 12 hours still has good quality and is worthy of consumption. LoA_Kor
