逆浸透膜処理水に、表1に示す組成の非重合体カテキン類組成物を、その合計濃度(非ガレート体換算濃度)が50ppmとなるように添加し、よく攪拌して溶解水(カテキン含有飲料)を得た。
得られた溶解水280mlをポリエチレンテレフタレートボトル(容量:280ml、酸素透過度:0.025cc/day・280ml・atm)に充填したものを、各溶解水につき4本ずつ用意し、80℃で10分間殺菌した後、1週間冷蔵保存するか、或は、58℃において1、2又は3週間保存した。
保存後の各溶解水の色調をLab色差計(日本電色工業株式会社 Spectro Color Meter SQ2000)を用いて測定し、冷蔵保存したものの値との差ΔEを求めた。なお、ΔEが大きいほど変色が大きいことを意味する。
結果を表1及び図1に示す。
