Abstract
A continuous process for producing a modified carbohydrate material in gelatinized form comprises subjecting the carbohydrate material containing moisture in the range of 10 to 40% an an adjunct to an intensive shearing and compressing action with attendant heating to temperatures in the range of 220 DEG to 350 DEG F. and pressures in the range of 100 to 5000 p.s.i., extruding the resulting modified material through a restrictive opening accompanied by a sudden release in pressure and loss of volatiles whereby said modified material is expanded into a porous form; said adjunct being selected from acids, alkalis, salts and mixtures thereof, enzymes and starch derivatizing agents; said carbohydrate material being selected from unmodified carbohydrate material, chemically modified carbohydrate material, derivatized carbohydrate material and mixtures thereof Starches specified include corn (maize), potato, tapioca, sago, rice, wheat, waxy maize, grain sorghum and waxy sorghum. Carbohydrate derivatizing agents mentioned include sodium tripolyphosphate, propylene oxide, 2,3-epoxy propyl trimethyl ammonium chloride, sodium chloroacetate, epichlorohydrin, acetic anhydride, maleic anhydride, 2-chloroethyl diethylamine hydrochloride, 2,3-epoxy propyl sulphonate, triethylamine, sulphur trioxide and urea. The process of the invention can also be used for the modification and hydration of hemicellulosic materials. Examples describe the production of a starch phosphate, a cationic starch prepared by reacting corn starch with caustic soda and a mixture of 2,3-epoxypropyl trimethyl ammonium chloride, a reaction product of corn starch and caustic soda, a reaction product of corn starch and hydrochloric acid, a urea-starch derivative and reaction products of starch with boric acid and with a mixture of boric acid and borax.
