Abstract
The invention belongs to the technical field of meal replacement powder processing, and discloses meal replacement powder which comprises the following components in parts by weight: 10-30 parts of flaxseed powder, 10-30 parts of oat beta-glucan, 8-20 parts of protein powder, 8-20 parts of Plantago ovata seed husk powder, 8-20 parts of fructo-oligosaccharide and 5-15 parts of auxiliary material powder; the adjuvant powder is composed of one or more of dietary fiber powder, rhizoma Amorphophalli powder, nut powder or seed powder, and oligopeptide powder. The meal replacement powder provided by the invention takes the flaxseed powder and the oat beta-glucan as main raw materials, wherein the flaxseed powder is prepared by adopting a degreasing process, is a byproduct of oil preparation by squeezing flaxseeds, and has low carbohydrate content.
Description
Technical Field
The invention belongs to the technical field of meal replacement powder processing, and particularly relates to blood sugar reducing meal replacement powder and a preparation method thereof.
Background
At present, workers who are popular candidates in the society have almost no way to do physical exercises due to heavy work, family and social pressure, so that subhealth of workers in China generally occurs. Many office workers are prone to suffer from overstrain and fatness which are mainly characterized by weight gain due to irregular long-term diet and frequent sedentary, and simultaneously suffer from continuously deteriorated gastrointestinal functions, metabolic diseases (such as type 2 diabetes) and cardiovascular and cerebrovascular diseases, and the quality of life is seriously affected.
The office workers need reasonable diet, but due to life rhythm and commuting pressure, many office workers do not have time to cook and eat, often have no breakfast, have a compact lunch and eat at night greatly, so that various nutrient components are not ingested reasonably.
Weight loss and blood sugar control are very concerned by people, many people lose weight by diet, but the long-term diet is used for losing weight, the tolerance relaxation function of the stomach is weakened, and after normal diet is recovered, the stomach cavity can not adapt to the transformation, so that the stomach is injured. Research shows that the food with low glycemic index can reduce insulin secretion, effectively control postprandial blood sugar and is beneficial to weight control.
Glycemic index, also known as glycemic index, refers to the percentage of the in vivo glycemic response level of a food containing 50g carbohydrate to 50g glucose consumed over a period of time (typically 2 hours). The higher the glycemic index, the faster the carbohydrate digestion and the blood entry rate, the greater the rate and magnitude of the rise and fall of blood glucose concentration, and the greater the effect on insulin level and sensitivity, which in turn affects fat deposition and diabetes risk, after a person eats the same amount of the food. People who have developed basal metabolic disease or need to control weight are generally recommended to consume low glycemic index foods (glycemic index < 55).
At present, few foods with low glycemic index can be conveniently and quickly eaten by people with basic metabolic diseases such as abnormal blood sugar and obese working groups in the market, so that the meal replacement powder which is convenient and quick and can reduce the blood sugar is urgently needed.
Disclosure of Invention
The invention aims to provide convenient meal replacement powder and a preparation method thereof, which are used for providing convenient meal replacement food for office workers suffering from basic metabolic diseases such as abnormal blood sugar and obesity, so that the people can also solve the dining problem in time in busy work, and meanwhile, the meal replacement powder has the beneficial effects of losing weight, controlling sugar and the like and can improve the quality of human bodies.
In a first aspect, the invention provides blood sugar reducing meal replacement powder, which comprises the following components in parts by weight:
the meal replacement powder disclosed by the invention takes linseed powder and oat beta-glucan as main raw materials, wherein the linseed powder is prepared by adopting a degreasing process, is a byproduct of linseed after oil preparation by pressing, mainly comprises protein and dietary fiber, has low carbohydrate content, about 38.2g/100g of protein and about 22.8g/100g of dietary fiber, is rich in 8-12% of omega-3 polyunsaturated fatty acid and alpha-linolenic acid, can supplement fatty acid required by a human body, and can reduce the risk of cardiovascular and inflammatory diseases.
The oat beta-glucan is naturally present in cell walls of oats, is soluble dietary fiber, does not influence the reconstitution performance of meal replacement powder, has the effects of reducing cholesterol and postprandial blood glucose response and the like, has different improvement effects on the composition and metabolism of intestinal flora, and can be used for pertinently improving the structure and related metabolism of the intestinal flora of type 2 diabetics. Meanwhile, the oat beta-glucan can obviously reduce the glycemic index of food, and the digestion and absorption of starch can be delayed by reducing the activity of amylase after a human body eats the oat beta-glucan, so that the effect of reducing blood sugar is achieved.
Plantago ovata husk is listed as a new resource food by No. 10 notice of the national committee for health and family planning 2014, the content of dietary fiber of the Plantago ovata husk reaches more than 80 percent, and the ratio of soluble dietary fiber to insoluble dietary fiber is as high as 7: 3. Meanwhile, the psyllium husk powder also contains a certain amount of polysaccharide colloid, has good thickening, water absorption and gelling properties of hydrophilic colloid, and can be used as a raw material to be added into meal replacement powder, so that the product properties after being brewed can be effectively improved. The U.S. FDA has stated in 1998 announcements that psyllium husk reduces the risk of cardiovascular disease.
The fructo-oligosaccharide is a mixture of kestose, nystose and the like generated by combining 1-3 fructosyl groups with the fructosyl groups in cane sugar through beta-2, 1 glycosidic bonds, belongs to soluble dietary fiber, can not be digested and absorbed by human bodies, has certain sweet taste, and can be eaten by people with blood sugar metabolism disorder and improve the taste of meal replacement powder.

In certain embodiments, the adjuvant flour is comprised of one or more of dietary fiber flour, konjac flour, nut or seed flour, and oligopeptide flour.
In certain embodiments, the dietary fiber powder is comprised of one or more of inulin, resistant dextrin, and galacto-oligosaccharides. The dietary fiber powder is added into the product, so that the content of the dietary fiber in the meal replacement powder product can be improved.
The dietary fiber is a polysaccharide, can not be digested and absorbed by gastrointestinal tracts and can not generate energy, and is divided into soluble dietary fiber and insoluble dietary fiber, the water-soluble dietary fiber is suitable for being applied to products with requirements on solubility due to the characteristics of good solubility, stability and the like, the volume of the soluble dietary fiber can be increased by dozens of times after the soluble dietary fiber absorbs water and expands, a gel substance is formed, on one hand, the soluble dietary fiber can generate satiety, reduce the intake of food and help to lose weight, on the other hand, the retention time of the food in the stomach can be prolonged, so that the sugar absorption speed is slowed, the sudden hyperglycemia phenomenon is avoided, the soluble dietary fiber is helpful for stabilizing the state of an illness of a diabetic patient, the soluble dietary fiber also helps to reduce cholesterol, and the symptoms of heart disease, hypertension and the like caused by cholesterol are. The invention discloses a method for preparing a dietary fiber food, which comprises the following steps: fructo-oligosaccharide, inulin, resistant dextrin, Plantago ovata forsk shell powder (the content of dietary fiber is more than or equal to 80 percent) and galacto-oligosaccharide are matched for use, so that the effect of the soluble dietary fiber can be better exerted.
The konjac flour is a food ingredient with low heat energy, low protein, low vitamin and high dietary fiber, and the dietary content is more than 80%. The rhizoma Amorphophalli refined powder has effects of building body, reducing weight, preventing and treating constipation, regulating lipid metabolism, and improving glycometabolism. The main component of the konjak fine flour is glucomannan, which has low heat and low fat, and the konjak fine flour has volume expansion of about 80-100 times after absorbing water, has a feeling of fullness after eating a very small amount of the konjak fine flour, cannot be digested by human enzymes, does not provide nutrients, can slow down the absorption of cholesterol and sugar substances, and has the effects of relaxing bowel, so the konjak fine flour has excellent weight-losing and body-building effects.
In certain embodiments, the nut or seed flour is comprised of one or more of walnut flour, peanut flour, sunflower seed flour, soybean flour, and the like. The nut or seed flour also improves product taste due to the low glycemic index of such materials.
In certain embodiments, the oligopeptide flour is comprised of one or both of corn oligopeptide flour, wheat oligopeptide flour.
In some embodiments, the hypoglycemic meal replacement powder further comprises 800 mg-1200 mg/100g of L-carnitine. The L-carnitine is a vitamin, is an important auxiliary factor for fatty acid metabolism, can transport medium-long-chain fatty acid into an inner mitochondrion membrane for beta-oxidation, removes fatty acid metabolites in the mitochondrion, plays a role in promoting fat metabolism and reduces the fat reserves of a human body. Deficiency of l-carnitine causes disorder of fat metabolism and causes accumulation of lipid substances in muscle fibers and liver, resulting in obesity, fatty liver, etc. The invention strengthens 800 mg-1200 mg/100g L-carnitine, which can meet the demand of human body for L-carnitine.
In certain embodiments, the hypoglycemic meal replacement powder further comprises an antioxidant, wherein the antioxidant is vitamin C and phospholipids.
In a second aspect, the present invention provides a method for preparing the hypoglycemic meal replacement powder according to the first aspect of the invention, the preparation method comprises the following steps,
a. preparing materials: mixing the following raw materials: weighing corresponding dosage of flaxseed powder, oat beta-glucan, protein powder, Plantago ovata seed husk powder, fructo-oligosaccharide and auxiliary material powder according to a formula;
b. feeding and stirring: putting the prepared raw materials into a stirrer, adding water and stirring for 10-20 min;
c. and (3) granulation: conveying the substance obtained by stirring in the step b to a granulator for granulation;
d. drying and sterilizing: c, conveying the particles obtained in the step c to a hot air circulation rotary baking furnace for drying treatment, wherein the drying temperature is 95 +/-10 ℃, and the drying time is 50 +/-5 min;
e. and (3) cooling: and d, cooling the semi-finished product obtained in the step d to obtain the finished product.
Compared with the prior art, the invention has the following technical effects:
1) the meal replacement powder disclosed by the invention takes linseed powder and oat beta-glucan as main raw materials, wherein the linseed powder is prepared by adopting a degreasing process, is a byproduct of linseed after oil preparation by pressing, mainly comprises protein and dietary fiber, has low carbohydrate content, about 38.2g/100g of protein and about 22.8g/100g of dietary fiber, is rich in 8-12% of omega-3 polyunsaturated fatty acid and alpha-linolenic acid, can supplement fatty acid required by a human body, and can reduce the risk of cardiovascular and inflammatory diseases.
2) The meal replacement powder provided by the invention contains rich dietary fibers, strengthens enough L-carnitine, can meet the requirement of a human body on the L-carnitine, and is expected to provide a convenient meal replacement food for office workers suffering from basic metabolic diseases such as abnormal blood sugar and obesity.
3) The meal replacement powder disclosed by the invention is convenient to eat, can be drunk after being brewed, can realize industrial production, can be used for solving the dining problem of people in busy work in time, has the beneficial effects of reducing weight, controlling sugar and the like, and can be used for improving the quality of human bodies.

It is to be noted that, unless otherwise specified, technical or scientific terms used herein shall have the ordinary meaning as understood by those skilled in the art to which the invention pertains.
Example 1
25kg of flaxseed powder, 25kg of oat beta-glucan, 15kg of concentrated whey protein powder, 14kg of psyllium husk powder, 12kg of fructo-oligosaccharide, 2kg of galacto-oligosaccharide, 2kg of resistant dextrin, 1kg of inulin, 2kg of konjac flour, 0.5kg of peanut powder, 0.5kg of corn oligopeptide powder and 0.9kg of L-carnitine are weighed respectively.
Meal replacement powder is prepared according to the following preparation method:
a. feeding and stirring: putting the weighed raw materials into a stirrer, adding water and stirring for 15 min;
b. and (3) granulation: b, conveying the substance obtained by stirring in the step a to a granulator for granulation;
c. drying and sterilizing: and c, conveying the particles obtained in the step b to a hot air circulation rotary baking furnace for drying treatment, wherein the drying temperature is set to be 100 ℃, the drying time is 60min, and the moisture content of the final product is less than or equal to 7%.
d. Cooling and packaging: and c, cooling the semi-finished product obtained in the step c, and then packaging to obtain the finished product.
Example 2
30kg of flaxseed powder, 18kg of oat beta-glucan, 12kg of concentrated whey protein powder, 20kg of psyllium husk powder, 10kg of fructo-oligosaccharide, 3kg of galacto-oligosaccharide, 3kg of inulin, 2kg of konjac flour, 0.5kg of walnut powder, 0.5kg of corn oligopeptide powder and 1kg of L-carnitine are respectively weighed.
Meal replacement powder is prepared according to the following preparation method:
a. feeding and stirring: putting the weighed raw materials into a stirrer, adding water and stirring for 20 min;
b. and (3) granulation: b, conveying the substance obtained by stirring in the step a to a granulator for granulation;
c. drying and sterilizing: and c, conveying the particles obtained in the step b to a hot air circulation rotary baking furnace for drying treatment, wherein the drying temperature is set to 95 ℃, the drying time is 60min, and the moisture content of the final product is less than or equal to 7%.
d. Cooling and packaging: and c, cooling the semi-finished product obtained in the step c, and then packaging to obtain the finished product.
Example 3
20kg of flaxseed powder, 28kg of oat beta-glucan, 13kg of soybean protein isolate, 10kg of psyllium husk powder, 15kg of fructo-oligosaccharide, 4kg of resistant dextrin, 4kg of inulin, 2kg of konjac flour, 1kg of walnut powder, 1kg of sunflower seed powder, 1kg of wheat oligopeptide powder and 1kg of L-carnitine are weighed respectively.
Meal replacement powder is prepared according to the following preparation method:
a. feeding and stirring: putting the weighed raw materials into a stirrer, adding water and stirring for 12 min;
b. and (3) granulation: b, conveying the substance obtained by stirring in the step a to a granulator for granulation;
c. drying and sterilizing: and c, conveying the particles obtained in the step b to a hot air circulation rotary baking furnace for drying treatment, wherein the drying temperature is set to 98 ℃, the drying time is 50min, and the moisture content of the final product is less than or equal to 7%.
d. Cooling and packaging: and c, cooling the semi-finished product obtained in the step c, and then packaging to obtain the finished product.
Effect example 1
The organoleptic properties of the hypoglycemic meal replacement powders prepared in examples 1-3 were evaluated by selecting 30 persons as sensory panel. The sensory evaluation results of the biscuits according to the evaluation criteria shown in FIG. 1 are shown in the following table:

As can be seen from the sensory evaluation results, the meal replacement powder prepared by the embodiment of the invention has higher index scores in the sensory test, and can meet the sensory requirements of consumers.
Effect example 2
1) 24 healthy adults were selected for the trial, 12 were the first group, with an average age of 28 years, 12 were the second group, with an average age of 30 years, and the trial was office work personnel with no history of diabetes and other metabolic diseases.

Food glycemic index determination
1) 24 healthy adults were selected for the trial, 12 were the first group, with an average age of 30 years, 12 were the second group, with an average age of 34 years, and the trial was office work personnel with no history of diabetes and other metabolic diseases.
2) All people fasted at 8:00 pm 1 day before the test, and fasting blood glucose was tested by the fingertip capillary method at 8:00 am the second day. The first group consumed the commercial product of the invention (equivalent to 50g net carbohydrate content) and the second group consumed glucose (50g) and blood glucose levels were measured 30min, 60min, 120min after the meal. The comparison figure is shown in figure 2.
3) Compared with glucose, the meal replacement powder disclosed by the invention has the advantages that after eating, compared with the eating of glucose, the increase of the blood sugar is very small, the blood sugar can be quickly reduced to a normal level, the better sugar control effect is achieved, and the blood sugar generation index is calculated to be below 55, so that the meal replacement powder is a low blood sugar generation index product.

7. The hypoglycemic meal replacement powder of claim 4, wherein the oligopeptide powder consists of one or both of corn oligopeptide powder and wheat oligopeptide powder.
8. The hypoglycemic meal replacement powder of claim 1, further comprising 800-1200 mg/100g of L-carnitine.
9. The hypoglycemic meal replacement powder of claim 1, further comprising an antioxidant.
10. A method for preparing the hypoglycemic meal replacement powder according to any one of claims 1 to 9, comprising the steps of,
a. preparing materials: mixing the following raw materials: weighing corresponding dosage of flaxseed powder, oat beta-glucan, protein powder, Plantago ovata seed husk powder, fructo-oligosaccharide and auxiliary material powder according to a formula;
b. feeding and stirring: putting the prepared raw materials into a stirrer, adding water and stirring for 10-20 min;
c. and (3) granulation: conveying the substance obtained by stirring in the step b to a granulator for granulation;
d. drying and sterilizing: c, conveying the particles obtained in the step c to a hot air circulation rotary baking furnace for drying treatment, wherein the drying temperature is 95 +/-10 ℃, and the drying time is 50 +/-5 min;
e. and (3) cooling: and d, cooling the semi-finished product obtained in the step d to obtain the finished product.
