Abstract

Kerang pisau (Solen grandis) merupakan salah satu jenis moluska dari Bivalvia yang termasuk biota perairan non ikan. Penelitian ini bertujuan untuk mengetahui hubungan panjang  dan  berat kerang pisau serta mengetahui karakteristik morfometrik kerang pisau (Solen grandis) di perairan Prenduan Kabupaten Sumenep. Penelitian dilakukan di Desa Prenduan Kabupaten Sumenep. Metode pengumpulan data dilakukan secara langsung di perairan Prenduan dengan menentukan 3 titik lokasi dan masing-masing lokasi mengambil 50 sampel kerang pisau. Hasil dari  perhitungan  hubungan panjang dan berat kerang pisau (Solen grandis) dari bulan Oktober sampai November memiliki nilai konstanta b kurang dari3 yang berarti allometrik negatif yaitu pertumbuhan panjang lebih dominan daripada pertumbuhan berat. Morfometrik rasio Lc/Pc masing-masing pada bulan Oktober sampai Desember terbanyak adalah pada kisaran 0,1438-0,1524;0,1668-0,1753;0,1423-0,1548. Rasio Tu/Pc bulan Oktober sampai bulan Desember tertinggi pada bulan Oktober jumlah individu 51 dengan rasio 0,0613-0,0728. Rasio Bd/Bt bulan Oktober sampai Desember tertinggi pada bulan November jumlah individu 43 dengan selang kelas panjang cangkang 25,18-26,50 persentase 59,95%.

Abstract

Keong Bakau (Telescopium telescopium) merupakan salah satu jenis gastropoda yang. banyak dikonsumsi sebagai lauk pauk dan memiliki khasiat sebagai obat asma. Tujuan dari penelitian ini adalah untuk menganalisis kandungan gizi dan senyawa bioaktif Telescopium telescopium di perairan Bangkalan. Telescopium telescopium memiliki kandungan nutrisi tinggi dengan nilai protein sebesar 12,16%, lemak 0,38%, mengandung asam amino essensial tertinggi berupa asam glutamat 1,20% dan asam amino non essensial berupa histidin sebesar 1,56%. Kandungan asam lemak jenuh tertinggi pada palmitat sebesar 27,81% dan asam lemak tidak jenuh pada lenoleat sebesar 9,03%. Ekstrak kasar daging Telescopium telescopium mengandung senyawa alkaloid, steroid dan flavonoid dengan IC50 aktivitas antioksidan tertinggi pada pelarut methanol sebesar 22,08 ppm.

Abstract

Catfish are traded in the form of whole fish and fillet products. Catfish are still not widely used or processed into value added products. The purpose of this study was to determined the effect of frequency of washing and frozen storage of catfish surimi characteristics. The research was conducted with several stages, they were to determined the characteristics of raw materials and to made within difference of washing frequencies to determined the best surimi; second, this study also to determined the effect of storage duration on physical and chemical characteristics of catfish surimi. The best of catfish surimi production due with once washing. It was based on test of fold, teeth cutting and water content. Storage treatments and cryoprotectan additional give different results on the value of TVB, pH and water content catfish surimi. The value of TVB, pH dan water content also increased. Hidonik test (folding and teeth cutting test) also shows the different results between the different treatment of both storage and cryoprotectan addition. During storage, the folding and teeth cutting test remains in good value which indicates deterioration in the quality of catfish surimi occurred slowly.

Abstract

Meningkatnya aktivitas manusia di sekitar perairan Kecamatan Socah seperti limbah industri dan rumah tangga dari Bangkalan, tumpahan bahan bakar kapal yang langsung terbuang ke laut, tumpukan sampah yang sengaja dibuang ke laut dan aktivitas lewatnya kapal laut memungkinkan berpengaruh terhadap biota perairan.Ikan belanak sudah banyak dan ditangkap di perairan Socah.Tujuan dari penelitian ini adalah untuk mengetahui kandungan gizi dan kadungan logam berat ikan belanak (Mugil sp.) yang berada di sekitar perairan Socah.Penelitian dimulai dengan pengambilan dan preparasi sampel, pengujian kandungan proksimat dan logam berat dengan perlakuan ukuran ikan (12 cm dan 25 cm). Hasil penelitian menunjukkan bahwa rendemen ikan belanak ukuran 12 cm sebesar 37,79% dan 38,87% untuk ikan belanak ukuran 25%. Kandungan kadar air berkisar 75,96-76,70%, kandungan protein berkisar 17,64-19,57%, kandungan lemak berkisar 2,83-3,33%, asam lemak bebas berkisar 1,43-1,47%, kandungan abu berkisar 1,14-2,94% dan kandungan karbohidrat berkisar 0,29-0,49%. Tidak terindikasi adanya logam berat Pb dan Hg pada perairan Socah dan pada daging ikan belanak.Kata kunci : belanak(Mugil sp), gizi, logam berat, perairan Socah

Abstract

Chitin is one of the natural polymer compound which is totally generous sufficient and most total after cellulose. This research directed to know optimisation process for the extraction of chitin from the carapax crabs by using automatic machine extraction. The research covered the activity which is appearance of utomatic machine extraction making that consist of determination level of the first extraction of optimation process. This study to analyzied the composition of raw material quality of chitin and standard of optimation of chitin extraction process. At last, this research determined continu of level optimation extraction process include study in characteristic quality of chitin. This study conducted refers to exhibit time combination during the process especially for demineralisasi and deproteinasi of chitin. Analysis for chitin extraction consist of rendemen, ash value, nitrogen value, water value, whaiteness level and deasetilasi level. The result have influence significant to examined parameter as ash value, nitrogen value, water value, whiteness level and deasetilasi level. Optimum condition obtained from demineralisasi process at 100 0C temperature for 60 minutes and deproteinasi process at 100 0C temperature for 60 minutes by 9.279% rendemen; 7.257% water; 0.6398% ash, 5.4068% total nitrogen, 50.2% whaiteness level and 21.3% deasetilasi level. Abstract

Bandeng (Chanos chanos) merupakan salah satu komoditas yang strategis untuk memenuhi kebutuhan protein yang relatif murah dan digemari oleh konsumen di Indonesia.Bau lumpur pada ikan umumnya pada ikan tawar disebabkan senyawa kimia yaitu 2-Methylisoborneol dan Geosmin.Tujuan untuk mengetahui kandungan kandungan gizi dan geosmin ikan bandeng (Chanos chanos) dari dua lokasi yang berbeda yaitu perairan tambak Lamongan dan Pamekasan.Penelitian ini menggunakan metode Uji Test-T dengan menggunakan dua faktor untuk analisa uji proksimat. Kandungan gizi ikan bandeng bervariasi, yaitu kadar air ikan bandeng Lamongan 74,71-76,06% dan Pamekasan 68,50-73,34%, protein ikan bandeng Lamongan 14,84-19,47 dan Pamekasan 21,29-23,53%.Bau lumpur ikan bandeng Lamongan mempunyai rata-rata 2,848 (sedikit berbau lumpur) dan Pamekasan 4,303 (sedikit sekali berbau lumpur).Kata Kunci: ikan bandeng, kandungan gizi, bau lumpurANALYSIS ON THE NUTRITION AND MUD SMELL OF MILKFISH (Chanos chanos) FROM TWO DIFFERENT LOCATIONSABSTRACTMilkfish (Chanos chanos) is one of strategic commodities for the fulfillment of protein needs that is relatively cheap and favored by consumers in Indonesia. The mud smell from the fish, usually freshwater fish, is caused by chemical compounds, namely 2-Methylisoborneol and Geosmin. The objective of this research was to find out the nutrition and geosmin of milkfishes (Chanos chanos) that were from two different locations, namely Lamongan and Pamekasan fish ponds. This research used testing method T-Test with two factors for proximate test analysis. The nutrition consisted in a milkfish varies, in which the water content contained in Lamongan milkfish was 74.71-76.06% whereas Pamekasan milkfish was 68.50-73.34% and the protein contained in Lamongan milkfish was 14.84-19.47 whereas Pamekasan milkfish was 21.29-23.53%. The mud smell of Lamongan milkfish was in average 2.848 (a bit mud smelling) whereas Pamekasan milkfish was 4.303 (hardly mud smelling).Keywords: milkfish, mud smell, nutrition

Abstract

Bandeng (Chanos chanos, Forskal) merupakan salah satu komoditas yang strategis untuk memenuhi kebutuhan protein yang relatif murah dan digemari oleh konsumen di Indonesia.  Bandeng sebagai bahan pangan, merupakan sumber zat gizi yang penting bagi proses kelangsungan hidup manusia Tujuan penelitian ini adalah untuk mengetahui komposisi kimia daging ikan bandeng yang berasal dari habitat yang berbeda yaitu air tawar dan air payau. Penelitian dilakukan dengan dua tahap yaitu preparasi sampel saat transportasi dan preparasi bahan baku untuk memisahkan daging, kulit, tulang dan jeroan. Analisa yang dilakukan yaitu analisis proksimat, asam amino, asam lemak, mineral dan vitamin. Hasil yang didapatkan bahwa ikan bandeng dari dua habitat memperoleh rendemen yang berbeda. Rendemen ikan bandeng air tawar sebesar 38,5%, sedangkan air payau sebesar 50,8%. Ikan bandeng kaya akan sumber protein (20-24%), asam amino, asam lemak, mineral dan vitamin. Komposisi asam amino tertinggi yaitu glutamat sebesar 1,386% (air tawar) dan 1,268% (air payau). Asam lemak tidak jenuh tertinggi oleat 31-32%, mineral makro pada daging ikan bandeng yaitu: Ca, Mg, Na dan K. Mineral mikronya terdiri dari Fe, Zn, Cu, Mn. Kandungan vitamin daging ikan bandeng meliputi vitamin A, B1 dan B12.Kata Kunci: habitat berbeda, ikan bandeng (Chanos chanos, Forskal), kandungan giziTHE ANALYSIS OF NUTRITIONAL CONTENT OF MILKFISHES WHICH COME FROM DIFFERENT HABITATSABSTRACTMilkfish (Chanos chanos, Forskal) is one of the strategic commodities to fulfill protein need which is relatively cheap and favored by Indonesian consumer. Milkfish as a comestible is an important sources of nutrient for the survival of mankind. The objective of this research is to know the flesh’s chemical composition of the milkfishes come from different habitats which are freshwater and brackish water. The research was conducted through two stages, the stage of sample preparation for transportation, and the stage of raw material preparation like separating flesh, scale, bone, and offal. The analysis which was conducted was analysis of proximate, amino acids, fatty acids, minerals and vitamins. The finding showed that two milkfishes from two different habitats got different yields. The yield of freshwater milkfish was 38.5%, while the brackish water milkfish was 50.8%. Milkfishes are rich with protein source (20-24%), amino acid, fatty acid, mineral and vitamin.The highest composition of amino acid was glutamate by1.386% (freshwater milkfish) and 1.268% (brackish water milkfish). The highest unsaturated fatty acid was oleic by 31-32%, macro mineralson milkfish flesh which were: Ca, Mg, Na and K. The mineral micro consisted of Fe, Zn, Cu, Mn. Abstract

Indonesia has a marine biological resources are very large with the content of various types of creatures living in it. The biological richness of which are fish that have a benefit in the field of food and health. Tunafish (Euthynnus affinis) is a species that is very interesting to study both in terms of nutritional composition and in terms of its economy. The purpose of this study was to determine the nutrient content and chemical compounds contained in red meat and white meat tuna. Research methodology includes observation of morphology, proximate analysis and phytochemical analysis of tuna. The highest yield was found in meat that  50%. Proximate protein content of the highest in the white meat that was 68.36%, the highest fat in red meat was 5.6%, the highest in red meat ash 3.29%, and the highest water on the white meat that was 12.16%. In the white meat and red meat tuna contained alkaloid, steroid, and carbohydrate compounds (molisch). Keywords: proximate, chemical compounds, tuna (Euthynnus affinis)

Abstract

Keong Bakau (Telescoplum telescopium), merupakan salah satu jenis gastropoda yang ditemukan dalam jumlah melimpah pada daerah bakau dan tambak. Biota ini memiliki nilai ekonomis dan banyak dikonsumsi difadikan lauk pauk serta memiliki khasiat sebagai obat asma. Tujuan dari penelitian ini adalah untuk menganalisis kandungan proksimat Telescopium telescopium di perairan Sepulu dan Socah, serta senyawa bioaktif Telescopium telescoplum. Hasil analisa proksimat pada perairan Sepulu memiliki protein sebesar 12,43 %; lemak 4,12 %; kadar air 77,08 %; kadar abu 2,77 % dan karbohidrat 3,60 %. Hasil analisa proksimat di perairan Socah didapatkan protein sebesar 12,26 %; lemak 4,60 %; kadar air 77,66 % dan kadar abu 2,50 %; serta karbohidrat 2,98 %. Ekstrak kasar dengan pelarut metanol pada perairan Sepulu dan Socah yang dikomposit, didapatkan rendemen sebesar 0,27 %. Hasil uji senyawa bloaktif ekstrak kasar daging Telescopium telescopium adalah alkaloid, steroid, flavonold, gula pereduksi, dan ninhidrin. Sedangkan untuk senyawa fenol hidrokuinon, karbohidrat, peptide, saponin, dan tannin tidak terdeteksi.Kata kunci : telescopium telescopium, analisa proksimat, senyawa bioaktif
